Pink Ombré Pancakes

These are so cute! Now…are we gonna make pink gradient pancakes on a weekly basis? No. We don’t have time for that…not even during shelter in place. BUT…these are such a fun surprise for anyone who is expecting a basic brown pancake.

What makes them pink? The secret in dragon fruit powder! It’s pretty tasteless and apparently has a lot of health benefit, but let’s be real…all this flour and dairy isn’t going to cancel out your carb/calorie intake lol.

Let’s get cooking!


Here’s what you’ll need:

  • 1 cup flour 

  • 1 tbsp sugar

  • 2 tsp baking powder 

  • 1/4 tsp cinnamon 

  • 1/2 tsp salt 

  • 1 egg

  • 3/4 milk

  • 1/4 cup butter (melted)

  • 1 tsp vanilla extract 

  • 2 1/2 tsp of dragonfruit powder (buy here or here)

  • 1/4 measuring cup for scooping batter

    *Makes 5-6 pancakes


Start by preheating your oven to the lowest temperature. Mine was 170. You’re gonna store finished pancakes in the oven until it’s eating time.

Next, melt 1/4 cup of butter. While that melts, whisk all the dry ingredients together in a large bowl.

Once the butter has melted, let it cool for a few minutes. You don’t want it too hot or it will scramble your eggs when you add it to the dry ingredients.

Add milk, eggs, vanilla and butter to dry ingredients and mix. No over mixing or you won’t get fluffy pancakes. Your batter should have some lumps and be thicc (yes with two C’s).

Make your first pancake by scooping 1/4 cup of batter onto a greased griddle over medium-low heat. Once you see little bubbles forming on the top of your pancake it’s ready to flip. (This will be a plain pancake, no powder added yet)

Next we’re going to add a 1/2 tsp of dragon fruit powder to the batter and mix. You’’ll be adding a 1/2 tsp of powder for every new pancake. So by the time you get to your last one, you would have used about 2-2.5 tsp of powder. Fold powder instead of going crazy with mixing. You want these fluffy, not flat booty pancakes.
