Strawberry Mint Pineapple Cocktail

The weather is warming up here in SF and I’m craving the beach and a nice fruity cocktail. When it comes to mixed drinks- pineapple and strawberries are my go-tos! I’ve done some testing this past week and I’ve concocted a cocktail so delicious that I can’t wait to share with you! I wanted something fresh and sweet, and I’ve accomplished that by mixing lemon, pineapple, mint, and strawberries. I’m hoping this will be one of your staples this summer! Now let’s get mixing!

Here’s what you’ll need:

  • Cocktail shaker

  • 4-6 mint leaves 

  • 2-3 strawberries 

  • 1 tsp sugar 

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 4oz pineapple juice 

  • 1.5oz vodka (add more if you’re feeling nasty)

  • 2 tbsp simple syrup 

  • Splash of strawberry Spindrift (any sparkling water will do)

  • Ice


  1. Add strawberries, sugar, mint, and lemon zest to cocktail shaker and muddle. The sugar will help breakdown mint leaves and the lemon zest will infuse throughout the paste.

2. Once muddled, add juice of one lemon, simple syrup*, pineapple juice, vodka and ice. Shake until the shaker gets ice cold!

*Make simple syrup by gently heating a 1:1 ratio of sugar and water until the sugar has completely dissolved . Let cool and store in the fridge for up to 1-2 months.

3. Once shaken until your hands are about to get frostbite…pour into your glass with ice. Add a splash of sparkling water, I’m using strawberry Sprindrift but any sparkling water will work. Garnish with mint leaves and enjoy!

Super simple right? It’s such a refreshing drink! Now feel free to adjust the recipe however you’d like. Want more liquor? Add it honey. Want less sugar? It’s okay…you weren’t that sweet to begin with. Wanna use lime? No…don’t do that.
